Butha-buthe Soup is a comforting and nutritious dish originating from the mountainous region of Lesotho. Traditionally, this soup incorporates a mix of local vegetables, grains, and often beans or meat, providing both satisfaction and sustenance. Ingredients

  • olive oil – 2 tablespoons / 30 ml
  • onion, chopped – 1 large / about 200 g
  • garlic cloves, minced – 3 cloves / about 15 g
  • carrots, diced – 2 medium / about 150 g
  • potatoes, diced – 2 large / about 300 g
  • cabbage, shredded – 1/2 small head / about 250 g
  • vegetable broth – 6 cups / 1.5 liters
  • cooked white beans – 1 cup / 240 g
  • dried thyme – 1 teaspoon / 1 g
  • salt and black pepper – to taste
  • fresh parsley, chopped – for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, then add the diced carrots and potatoes. Cook for another 5 minutes, stirring occasionally.
  3. Add the shredded cabbage and continue to cook for a further 3 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat to low and let the soup simmer for about 20 minutes or until the vegetables are tender.
  5. Add the cooked white beans and dried thyme to the soup. Season with salt and black pepper to taste.
  6. Simmer for an additional 10 minutes to allow the flavors to meld together.
  7. Serve hot, garnished with fresh chopped parsley.
