Biang biang noodles – Classic

Biang Biang Noodles, originating from the Shaanxi province of China, are legendary for their wide, thick ‘belt’ shape and chewy texture. Named after the sound created when slapping the dough against a work surface, these noodles are traditionally served with a fiery topping of chili oil, garlic, and soy sauce, blending spice and umami in perfect harmony. They are a beloved staple of street food in Xi’an, known for their hearty, comforting taste.

Ingredients

  • all-purpose flour – 3 cups / 360 g
  • water – 1 cup / 240 ml
  • salt – 1 tsp / 5 g
  • vegetable oil – 2 tbsp / 30 ml
  • garlic – 6 cloves, minced
  • soy sauce – 1/4 cup / 60 ml
  • Chinkiang vinegar – 2 tbsp / 30 ml
  • ground Sichuan peppercorns – 1 tsp / 5 g
  • chili oil – 4 tbsp / 60 ml
  • scallions – 4, thinly sliced

Instructions

  1. Mix flour and salt in a large bowl. Gradually add water, mixing until a shaggy dough forms.
  2. Knead the dough for 10 minutes until smooth. Cover and rest for 1 hour.
  3. Divide dough into 8 equal pieces. Roll each into a ball and flatten slightly.
  4. Brush each piece with vegetable oil, cover, and let rest for 30 minutes.
  5. Stretch each piece of dough into long, flat noodles using your palms.
  6. Boil the noodles in salted water for 2-3 minutes. Drain and set aside.
  7. In a bowl, mix garlic, soy sauce, vinegar, chili oil, and Sichuan peppercorns.
  8. Toss the boiled noodles with the sauce and top with sliced scallions.
